Edamame Hummus


I LOVE chickpeas!  The problem is, they don’t love me.  While experimenting in the kitchen, I discovered this delightful alternative. Edamame hummus!

Ingredients

  1. 2 cups shelled, organic edamame beans

  2. 1/4 cup organic, extra-virgin olive oil

  3. 3 TBL Dijon Mustard (I prefer Mailie brand)

  4. 1 tsp. +- Himalayan sea salt

  5. 1/2 lemon squeeze

  6. 1/2 cup water

Here’s How

  1. Boil beans until tender (aprox. 5-7 min if frozen).

  2. Toss ingredients (excluding salt) into blender.

  3. Pulse until desired consistency.

  4. Add salt to taste.

  5. Serve with fresh vegetables or sprouted tortilla chips.
